Cochon 555 is a national culinary competition promoting heritage breed pigs and breed diversity, and is holding events in 10 cities across the US, including New York, Boston, Washington DC, San Francisco, Los Angeles and New Orleans, among others. The 10-city tasting tour, which kicks off January 23rd, 2011 in New York City, challenges five chefs in each city to prepare a menu created from heritage breed pigs, nose to tail.
