The gargoyle on the label says it all: uncompromising, bold and aggressive. Though Stone Brewing Company is a relatively young upstart, it has captured the public’s taste and imagination with its blitzkrieg campaign of beer.
Founders Steve Wagner and Greg Koch opened the doors to the first Stone Brewery in San Marcos in 1996. In less than a decade their beers had become so popular that Koch and Wagner decided to build a new forum for their brews. The result: Stone Brewing World Bistro and Gardens. The multimillion-dollar brewery and restaurant has quickly become a mecca for beer aficionados. Its style can best be described as Modern Gothic, in keeping with the hawkish gargoyle motif. However, within its rough stone and statue construction is a brazen beauty. The outside beer garden is draped with koi ponds, whose stone lily pads emit gas flames for ambience.
The brewery offers tours and tasting, as well as deals on kegs and growlers. For something to nibble on when the brews start kicking in, be sure to sample from the eclectic menu for a new take on classic finger foods. Even the onion rings are a testimony to Stone’s unique style.
