Inspired by the seasonal products available on a particular day, the hallmark of his style is the pairing of seafood and now meat and poultry as well with, for example, a ragout, braise, or a roast of vegetables that produces a striking complement to the dish's main ingredient. His cooking creates a harmony among the main ingredients, its sauce and its garnish.
